The best Gluten-free banana bread

There’s always a moment when the kids, those same kids that ate a whole bunch last week, suddenly don’t like bananas anymore and you’re left wondering what to do with that too-soft bunch on the counter. This easy gluten-free banana bread is your delicious, no-fuss answer. It’s soft, naturally sweetened, and perfect for lunchboxes, breakfast on the go, or freezing for future snack emergencies.

And the best part? Little hands can help mash, mix, and even slice—turning kitchen chaos into a memory worth capturing.

Ingredients

  • ¼ cup of melted coconut oil

  • ½ cup of honey

  • 4 large eggs

  • 3 mashed ripe bananas

  • 1.5 teaspoon of baking powder

  • 1 teaspoon of vanilla extract

  • ½ teaspoon of ground cinnamon

  • ½ teaspoon of salt

  • 2 ½ cups of almond flour

Directions

  • Combine all the wet ingredients by hand or in a blender.

  • Add the mashed banana.

  • Add everything else except the almond flour.

  • Fold through the almond flour.

  • Pour into a greased/lined loaf tin and bake at 160 for 55-65 mins.

  • Wrap in clingfilm whilst still warm and allow to cool

  • If freezing: Slice and separate with pieces of greaseproof paper before popping in the freezer.
